
White peppercorns have a hotter, cleaner flavor without any of the dark
specks that may ruin the appearances of some dishes. White peppercorns are
black peppercorns that have had their outer surface polished off.
White pepper deserves more credit as a unique flavoring than it
is often given in western cooking. Its light color is not the only reason
this pepper is the preferred pepper in much of the world, its white
peppercorns unique flavor. White pepper has a slightly musky aroma and
flavor which goes especially well with meats such as pork. This pepper
lacks the citrus overtones of black pepper.
