Sichuan Peppercorns |

These peppercorns from the Sichuan province of China are not a
true peppercorn, but used as a substitute for, and sometimes an addition
to other kinds of pepper. Sichuan pepper has a citrusy, spicy flavor
that can literally give the mouth a numb, tingly feeling if it is
overused. Sichuan peppercorns are a component of Chinese five spice
powder and are also simmered in oil with other spices and then used to
quickly cook thinly sliced meats.
